MY VISION FOR KEY #5!
Canvass for Life

I believe Dr. Phil has provided each of us with a blank canvas on which to paint our own destiny. My painting shall be of radiant colors. The vibrant red of a fresh plump tomato, the bright green of a crisp bell pepper and the deep purple of a firm eggplant. Then I'll add the sweet sunshine yellow of an ear of corn and the rich brown of a perfectly seared steak. I'll let the flow of lively fresh-squeezed orange juice run through my painting. The blushing pink grapefruit shall cast light upon the creamy olive avocado and stark white potato. I'll add flecks of black beans, yellow and green split peas, tan and orange lentils, cream-colored garbanza beans and dark maroon kidney beans. Lastly, I'll add a dash of seasoning on top to add mystery and intrigue the senses. This is my picture, an abstract design of colorful beauty...full of health and energy, full of life...Delight Tabesh, Westminster, CA

RECIPES

APPLE PIZZA PIE

Attractive and Wonderful!

Yields 8 servings.

I use Whole Wheat Boboli Bread
Or any whole wheat pizza crust
Olive oil mist the crust and top with

PREHEAT oven at 450 degrees and line pizza pan with parchment paper

1 Tbsp reduced fat margarine
4 or 5 apples, peeled and sliced into thin wedges
½ cup Splenda
½ tsp cinnamon
½ tsp vanilla
Sautee` the apples in butter first; then add the above ingredients in skillet. Dissolve 1 Tbsp cornstarch in ½ cup of cold water and add to skillet, cooking until apples are tender crisp. Spread apple mixture on top of the cheese covered pizza crust.

Walnut-Streusel Topping

¼ cup whole-wheat flour
1/3 cup Splenda
1 tsp cinnamon
1/8 tsp salt
3 Tbsp reduced fat margarine
½ cup chopped walnuts (or pecans)
Mix together, cutting in the margarine to make a crumb topping and spread this over the apples.

REDUCE oven temperature to 425 degrees and bake for 10 minutes. To crisp the crust, remove from the parchment-lined pan and place directly on the oven rack for 1-2 additional minutes. Allow to cool a bit before slicing. If you slice too soon…the apples slide off!!! And… you won’t want to miss any of the delicious apples!

WLC Challenge Corner

Hello to all from Windsor, Maine

Well it certainly is spring here and the days are getting longer which makes it better for all to take nice evening walks.
I have been doing some great workouts at our new fitness center that was opened here in my town just a couple weeks ago. What a way to welcome spring, to go into a new looking, new smelling exercise place. Gotta love it!! Had a day with a trainer. She showed me exactly what I need to do to get my body in shape as I lose weight. Something I really needed..lol.. Seems I need to be doing the weights 3 x a week, with the cardio as often as I like. So have been doing some great workouts and hope to see some results from the hard work and effort I am putting in. Will keep you all posted as time goes on.
Not much else going on in my world at this time other than my dear husband having some voice problems. he had the flu a few months ago and then lost his voice and has not been able to vocal since.. Now let me tell you, at first it was nice..lol..kinda liked to poke fun, am sure you know what I mean, but it has been over 3 months and it no longer is fun or funny. It has become serious. Has had one appointment with a specialist who has sent him to another specialist. Now we wait for that appointment. Not fun!! You might keep him in your prayers. Thanks to all in advance.
I will try to write more next month on my weight loss journey and hopefully will have a great report on both my weight going down and DH having his voice back.
Now get outdoors and take a nice long walk. You will be better for it!

Will post updated photos next month!

Till next month,
Paula from Maine signing off.
